Abstract

Kajian yang dijalankan ini berobjektif untuk mendapatkan penjelasan tentang kesan interaksi gula-protein terhadap sifat-sifat fisiokimia matriks gluten. The present study was undertaken with the objective of elucidating the effect of sugar-protein interactions on the physicochemical properties of gluten matrix.
