Abstract

Pada masa kini, masih kurang kajian dan maklumat berkaitan kandungan nutrien dan asid lemak daging ayam alternatif dalam kalangan masyarakat. Oleh itu, objektif kajian ini adalah menganalisis dan membandingkan kandungan nutrien dan asid lemak bagi ayam pedaging, ayam kampung, ayam organik & ayam hutan mengikut bahagian badan bagi kategori mentah dan masak dan seterusnya mengenalpasti jenis ayam dan bahagian badan yang mengandungi nutrien dan asid lemak yang baik untuk kesihatan. Nowadays, there are still less research and information on nutrient composition and fatty acids on alternative chicken meat among the community. Therefore, the objective of this study was to analyze and compares the content of nutrients and fatty acids on broiler, indigenous, organic and jungle fowl chicken, based on body parts for raw and cooked category and determine the type of chicken and part of the body that contains nutrients and fatty acids which are good for health.
