Abstract

Forensic trace analysis of residues from processed foods has received little attention, despite the fact that various studies have described tomato carotenoids for food quality and authenticity. This study aimed to compare carotenoid profile of tomato sauce residue extracted from different substrates. In this study, a representative tomato sauce residue was extracted from three surfaces, napkin, wrapping paper and cloth. Through a solvent extraction method, the extracted samples were extracted and subsequently analysed using high-performance liquid chromatography-photodiode array (HPLC-PDA). From the study, carotenoids were successfully extracted from tomato sauces residues on different substrates. Based on the HPLC profiles, seven identifiable peaks were evident. Statistical tests, including Shapiro-Wilk test, Kruskal-Wallis test, Pearson’s correlation test and principal component analysis (PCA) were carried out, revealed that there was no significant difference in carotenoid composition across surface types. The overall findings demonstrate that carotenoid recovery from processed food residue was possible, supporting potential application of surface-based sampling in real-world contexts. In future work, more different common substrates should be included, along with varying environmental conditions that are unfavourable for sample preservation, to mirror realworld forensic case
