    Abstract

    The main objective of this project was to evaluate the growth properties and bioconversion of isoflavones of probiotics in soymilk and the characterization of the fermented soymilk over storage.Probiotics from the genera of lactobacilli and bifidobacteria were evaluated for their viability and growth characteristic in soymilk.
